Pineapple and Tomato Sticky Rice is a rice preparation by using coconut milk.and this is bit sticky and ideal to have with fish or chicken curry.you have to have this hot.if the dish get cold the idea is off.you are free to use thai jasmine rice also in here.even you can use sri lanakan red rice in here.
Ingredients
- 200 g Cooked Basmathi rice
- 1 chopped onion
- some garlic chopped
- karapincha leaves
- 1/4 tumaric powder
- 1/4 curry powder
- 50 g pineapple diced
- 1 tomato diced
- 50 ml thick coconut milk
- salt
- pepper
Method
Step 1
cooked the basmathi rice and keep a side.allow to cool
Step 2
heat another pan,add onion and garlic and curry leaves,saute for few minutes..add curry powder and tumaric
Step 3
add coconut milk next,add pineapple and tomato cook for 2 minutes in slow fire
Step 4
add the rice,saute for 1 minute in high heat.add salt and pepper .season according to your choice.
