Amba Maluwa – Mango curry one of famous dish in sri lanka.and it give the high value to our traditional rice and curry.ideal dish for occasions.the sweet and sour bland the dish so nicely.i love to make my rice mango dish with more aromatic spices.in down south have unique method of recipe.some use coconut milk and some not.
Ingredients
- 300 g Mango raw
- 1 onion sliced
- 2 cloves of garlic chopped
- 1/2 tsp tumaric powder
- rampe /karapicha
- cinnamon,cloves.cardemon
- 2 tsp chili powder
- 1 1/2 Roasted Curry powder
- 50 ml coconut milk
- 100 ml water
- salt
- pepper
- 1 tsp sugar
Method
Step 1
peel the mango and cut in to pieces.keep a side
Step 2
Heat the oil,add rampe karapincha and saute for few seconds,add cardamon, cinnamon,and cloves in to it
Step 3
saute,add the mango in to it.fallow with all powders which is mention before
Step 4
mixed it well,reduce the fire and cook for some time.
Step 5
add the bit of water in to it.cook for a while
Step 6
finally add coconut milk,salt and sugar
Step 7
cook in very slow fire for some time,till mango get mash and pulpy.
