The word cardamon derives from latin & this spice is recognized by its small black seed pods with a thin papery outer shell. Cardamons are commonly used as a flavoring in both foods & drinks, cooking spice and at times as medicine. Guatemala is the biggest producer & exporter of cardamon in the world, followed by India. Sri Lanka have also begun to cultivate cardamon. This is the world’s third most expensive spice by weight. Cardamon is distributed as; Green cardamon or True cardamon & these spread from India to Malaysia. Black & Brown cardamon, java cardamon, Bengal cardamon, White cardamon,; these are mainly distributed in Asia & in Australia.
